New Recipe | Try Our Spring Garden Mocktail
Now the sunshine seems to be making more regular appearances, it’s time to head outdoors and enjoy spring to its fullest.
Using your spring herbs, this easy to make mocktail is delicious, refreshing and can be enjoyed throughout the day. We’ve chosen rosemary but mint, basil or thyme could make for lovely alternatives.
• LARGE CUCUMBER, SLICED
• 1 LIME, FRESHLY SQUEEZED
• 1 TBSP ROSEMARY SIMPLE SYRUP (1 CUP OF AGAVE SYRUP, 1 CUP WATER, 2 ROSEMARY STEMS)
• TONIC WATER
• ICE
• ADDITIONAL LIME AND ROSEMARY TO GARNISH
1. Make your simple syrup. Heat the agave syrup with the water over a high heat, stirring continuously, until dissolved, and then add the rosemary.
2. Remove from the heat and allow to infuse for 30 minutes. Strain into a clean container and allow to cool.
3. Slice the cucumbers and muddle in the bottom of the glass.
4. Add large ice cubes.
5. Squeeze in the lime juice.
6. Add the rosemary syrup and gently stir.
7. Top with tonic water and stir again.
8. Add the rosemary sprigs.
9. Rub a lime wedge around the rim of the glass.
10. Finish with a lime slice.
For an evening or weekend treat, simply add a measure of vodka and enjoy as the sun sets.
