
Summertime Sangria
A crowd pleaser for sunny afternoons, our summertime sangria brings a raspberry and rosemary twist

Ingredients
Raspberry Simple Syrup
- 120g raspberries
- 1 cup of water
- 1 cup of agave syrup
Summertime Sangria
- 1 bottle of dry white wine
- Raspberry simple syrup
- 4 nectarines, sliced
- 2 lemons, thinly sliced
- Handful of raspberries
- 500ml ginger ale
- Rosemary stalks (washed) to garnish
Instructions
- 1First make your simple syrup. In a small saucepan, combine the raspberries, water and agave over a medium heat until the mixture just begins to simmer.
- 2Turn off the heat and leave to cool.
- 3Over a small bowl, push syrup through a mesh sieve to catch all the raspberry seeds, leaving you with only the smooth liquid.
- 4Place the nectarine wedges, lemon slices and raspberries into a pitcher and squeeze in the juice of the other lemon.
- 5Pour the simple syrup (like it less sweet? Try using half to begin with) and the entire bottle of white wine over the fruit.
- 6 Refrigerate the sangria for at least 4 hours to let the fruit soak up the alcohol.
- 7Prepare wine glasses with ice and a stalk of rosemary for decoration.
- 8Fill the glass until ¾ full (including some of the fruit) then top off with a little ginger ale to taste.
